Citrus Shrimp Cocktail Recipe

Ingredients
  

  • 1 lb. medium or large shrimp peeled and deveined
  • 3 T fresh orange juice
  • 4 T fresh lime juice
  • 1 cup tomato juice
  • 1 T horseradish ground and prepared
  • ½ cup finely chopped white onion
  • 3 T finely chopped cilantro
  • 1 clove garlic finely chopped
  • 1 jalapeño seeded and finely chopped
  • 1 avocado diced
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Tortilla Chips for Serving

Instructions
 

  • In a large pot, bring water to a boil. Cook shrimp until pink and opaque, about 2-3 minutes. Immediately transfer the shrimp to an ice water bath using a slotted spoon to stop the cooking process and keep them tender.
  • In a bowl, combine orange juice, lime juice, tomato juice, horseradish, white onion, cilantro, garlic, and jalapeño. Mix well.
  • Drain the cooked shrimp. Add the cooled shrimp and avocado to the tomato mixture. Season with salt and pepper.
  • Chill in the refrigerator for at least 1 hour before serving.
  • Garnish with fresh cilantro and serve in small bowls or cocktail glasses.
