    Dough

    • 3 tablespoon Psyllium Husks
    • ¾ Cup Warm Water
    • ¼ Cup White Sugar
    • 1 Cup Tapioca Starch
    • 2 tablespoon Arrowroot Powder
    • 1 Cup + 1 tablespoon Millet Flour
    • 3 tablespoon Cassava Flour
    • 2 teaspoon Instant Yeast
    • 1 ½ teaspoon Baking Powder
    • 2 teaspoon Xanthan Gum
    • 1 teaspoon Salt
    • ¾ Cup Warm Whole Milk
    • 1 Large Egg Room Tempature
    • 3 tablespoon Unsalted Melted Butter

    Cinnamon Filling

    • ⅓ Cup Melted Butter
    • ⅓ Cup Brown Sugar
    • 1 tablespoon Cinnamon

    Cream Cheese Frosting

    • 5 tablespoon Cream Cheese, softened
    • 3 tablespoon Unsalted Soft Butter
    • 1 Cup Powdered Sugar
    • 1 teaspoon Vanilla Extract
    • 2 tablespoon Heavy Cream
    • ¼ teaspoon Salt

    Instructions
     

    Preparing the Dough

    • Mix psyllium husks with warm water and let it sit until it forms a gel.
    • In the bowl of a stand mixer, add the tapioca flour, millet flour, cassava flour, yeast, baking powder, xanthan gum, and salt to the sugar mixture, mixing well.
    • Make a well in the center of the dry ingredients, add in the psyllium gel, warm milk, egg, and melted butter.
    • Using the dough hook attachment of a stand mixer, mix until the dough is smooth and pulls away from the sides.

    Assembling the Rolls

    • Butter a 14-inch cast iron skillet or round baking dish.
    • Mix ⅓ cup melted butter, ⅓ cup brown sugar and 1 tablespoon cinnamon for the filling.
    • Roll out the gluten-free dough on a floured surface with a rolling pin, spread the filling evenly, slice into strips with a sharp knife or a pizza cutter, and roll each strip.
    • Arrange the rolls in the cast iron skillet for proofing.

    Proofing for Baking

    • For best results let the dough rise in a warm spot covered with a tea towel until doubled in size, about an hour to an hour and a half, then bake rolls in a preheated 350ºF oven. Cover with foil for the first 15 minutes, then uncover and bake until golden about 20-25 minutes.

    Preparing the Icing

    • Whisk cream cheese and butter until smooth, then add sugar, vanilla, and salt, followed by lemon curd.
    • Spread the icing over warm rolls.

    Serving and Storage

    • Enjoy the rolls warm, storing any leftovers in an airtight container and briefly reheating before serving.
