The Birth of a Barbecue Classic

It's said that Big Bob Gibson of Decatur, Alabama, concocted the original recipe for Alabama White Sauce in the early 1920s. Gibson, a BBQ pitmaster, wanted something different from the traditional, thick, sweet sauces. His invention? A thin, tangy sauce that perfectly complemented smoked chicken and pork, it quickly became an Alabama white BBQ sauce legend.

    White BBQ Sauce Ingredients

Mayonnaise: The creamy backbone of this sauce, mayo adds a luxurious texture that contrasts beautifully with the tangy and spicy elements, making it a perfect salad dressing or dipping sauce for french fries. You can substitute either sour cream or plain greek yogurt here if you prefer. You. may want to shy away from using Miracle Whip as it already has more vinegar in it and is a bit tangier.

Apple Cider Vinegar: With its sharp, tangy vinegar bite, apple cider vinegar cuts through the richness of the mayo, lending the sauce its characteristic zing and promoting the natural flavors of the meats it accompanies.

Brown Sugar: A hint of brown sugar brings a touch of sweetness, balancing the acidity and heat with its rich molasses notes.

Mustard Powder: This dry spice offers a pungent kick, echoing the complexity of spicy brown mustard and adding depth to the sauce. You could substitute creole mustard or add a little onion powder for some extra flavor.

Lemon Juice: Fresh lemon juice brightens the sauce with a citrusy lift, ensuring that each bite is as refreshing as it is flavorful.

Horseradish: Adding a fiery, earthy dimension, horseradish injects a sharp heat that makes the sauce stand out. Make sure to use ground or prepared horseradish and not horseradish sauce that already has mayonnaise in it.

Salt and Black Pepper: These seasoning staples elevate the sauce, highlighting its intricate blend of flavors.

Cayenne Pepper: A dash of cayenne pepper introduces a spicy heat that lingers, bringing warmth to every mouthful. Or, use a couple of dashes of hot sauce to spice it up.

Alabama White Sauce: A Sauce for All Occasions

Alabama White Sauce is incredibly versatile. Originally paired with smoked or grilled chicken, it has found its way onto pork chops, chicken wings, and even whole chickens. Its unique flavor profile also makes it an excellent condiment for green tomatoes, turning the simplest ingredients into a culinary delight.

Making Alabama White Sauce is as simple as combining the following ingredients in a large bowl. The key to its success lies in the balance of flavors—creamy yet tangy, sweet yet spicy, creating a harmonious blend that elevates any dish to the next level. Once prepared, store it in an airtight container in the fridge, where it becomes even more flavorful as the ingredients meld together.

    Beyond the BBQ

While it's a bbq staple in Northern Alabama, this white sauce recipe has crossed state lines and culinary boundaries. It's a fantastic dipping sauce for french fries, a bold salad dressing, a great topping for Tri-Tip Tacos, and a unique marinade that promises to make your bbq chicken the talk of the town.

As you whisk together the mayo, apple cider vinegar, and the rest of the ingredients, you're not just making a sauce; you're becoming part of a tradition that spans almost a century.
