4cupsRomaine Lettucespinach, butter lettuce, and baby romaine work well also
½cupcucumberthinly sliced
¼cupshredded carrots
¼cupradishesthinly sliced (optional for a bit of crunch)
¼cupdried cranberries or golden raisins
¼cupcrumbled goat cheese or fetaoptional
¼cupsunflower seeds or pumpkin seeds
For the Citrus Dressing:
3tablespoonolive oil
2tablespoonorange juicefreshly squeezed is best
1tablespoonwhite wine vinegar or rice vinegar
1teaspoonhoney or maple syrup
Salt and freshly ground pepper to taste
Instructions
Make the Dressing:
Whisk together olive oil, orange juice, vinegar, honey, salt, and pepper in a small bowl or jar until well combined.
