Ingredients
  

  • 1 cup long grain rice jasmine rice works great, rinsed (or brown rice if that is a preference)
  • 1 ½ cups cold water or chicken broth for extra flavor
  • ¼ cup fresh lime juice
  • ¼ cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions
 

Cook the Rice

  • Place the rinsed long-grain rice and water or chicken broth in a rice cooker or pressure cooker. Follow the manufacturer's instructions for cooking time. For a stove top version, combine the cup of rice with the water or broth in a medium saucepan, bring to a boil, reduce to medium heat, and simmer until the rice is tender and the liquid is absorbed.

Fluff and Season

  • Once the rice is cooked, fluff it with a fork to separate the grains. Stir in the fresh lime juice, chopped cilantro, salt, and pepper. The fresh cilantro and lime zest add a refreshing touch, making this dish perfect for hot summer days.

Serve
